See what jeff likes- in a quick tasting. Let jeff tell chef/ what jeff likes. Say 2 out of the 5. Then next day let the chef cook more of those liked 2 styles- much better process then last tasting. Also I feel this chef is exactly what jeff will really like especially for guests/dining in your home but Thur is the only day he can not cook Wed or fri or sat.
