My teacher said a good first step would be to eat very good Kaiseki and suggests the following in Tokyo and
Kyoto. Once you've tried Kaiseki and next time if she can get more advanced notice maybe she can arrange
something.

She says that Kaiseki is a complex and very involved form of cooking and you really need to understand the
whole thing to really appreciate it. She is worried that just doing a part of it will give you an incomplete view.
Also, Kaiseki is a very specific and special form of Japanese food and she doesn't want you to get the wrong
impression of Kaiseki.

We are still waiting for the confirmation from the hotel in Kyoto, if everything works out we will be there from
the 26th till 1st ( had to change the dates again, as that was the only time available at the hotel). So we will
probably get back to Tokyo only in the evening on Oct. 1st, which I assume would be late for the class..

Hi Mizuka,
I wanted to let you know, that we had to change our travel dates slightly. As of now, we will be in
Tokyo from Sep 22nd - 27th, then Kyoto from Sep. 28th- Oct.1st, and again Tokyo Oct. 2nd-Oct 4th,
Oct. 5th back to NY. I hope this would not interfere with the cooking class schedule..
And also, Mizuka, could you please see if this address of the Tawaraya hotel in Kyoto looks right in
English, as the travel agent seemed to book the wrong hotel at first. Their website is in Japanese, so
